Chocolate & Matcha Oat Waffles (Gluten Free)

A quick dessert to make and great as an alternative for those who are gluten free without sacrificing flavour. These are easy to make and great fun to decorate! 
Prep Time 30 mins
Cooking Time 20mins
What you’ll need to make around three medium sized waffles:
Ingredients
  • 1½ cups oat flour / 1 ½ c of instant oats to make oat flour
  • 2 teaspoons baking powder
  • Pinch of salt
  • ¾ cup room temperature milk of choice (light coconut milk, nut milk, cow's milk)
  • ¼ cup + 1 tablespoon melted coconut oil or 5 tablespoons butter, melted
  • 2 large eggs
  • 1 ½ Tbsp. maple syrup
  • 1 tsp vanilla extract
  • 1 ½ tsp Thea Matcha
  • 1 ½ tsp of cocoa powder
  • Fruit of choice to garnish – we use strawberries, banana, nashi pear, pomegranate and kiwifruits
Matcha Maple Syrup
  • 1 Tbsp Thea Matcha
  • 3 Tbsp or as desired Maple Syrup
Gadgets
  • Food Processor/ Nutri Ninja
  • Two bowls
  • Sift
  • Two spoons
  • Measuring utensils
Step 1: Oat flour.. where can you find it? It’s quite simple really… you’re going to make some! In a food processor (we used a magic bullet) put in the instant oats and blitz them until it resembles flour. It may smell a bit burnt nutty smell but just blitz in intervals and it will come out fine.
Step 2: Sift the flour into a bowl, re-blitz any bigger pieces if need be but you should have enough flour from this. You won’t need to pack in your oat flour, just fill until it reaches the 1 ½ cup mark
Step 3: Mix together the rest of the dry ingredients ( apart from the cocoa powder and Matcha)
Step 4: In another bowl, mix the wet ingredients – making sure your coconut oil/butter is still wet
Step 5: Make a little well in the dry ingredients and then pour the wet ingredients in and fold in. Don’t mix too much.
Step 6: Separate the batter into two bowls. Add the Matcha and cocoa powder to one bowl each and fold in gently. Leave it to rest for 10 minutes in a warm room.
Step 7: Prepare your fruit. Cut them into thin slices, dice them up or create cute little shapes like our lotus kiwifruit.
Step 8: Once 10 minutes are up - Prepare your waffle iron and then pour your batter in from the centre outwards. Cook your waffles for around 2-4 minutes or until golden and crispy. We managed to create one full Matcha and Chocolate waffle each and then a half and half waffle.
Step 9:  Arrange your fruit  and then squeeze out your desired amount of maple syrup and then mix a heaped Tbsp of Matcha. Pour all over your waffles. We also used Lewis Road Creamerie’s Chocolate Butter which was divine!
Thea Tips:
  • Make sure the oat flour is fine as you sift if you want fluffier texture – set aside the bigger bits and you can toast them and sprinkle over the waffles for added texture to your dish.
  • For even more fluffiness, separate the eggs and beat the whites to soft peaks and fold in!
  • Don’t stack your waffles or they’ll go soggy. Leave them to cool on rack.
